Artichoke, Spinach and Tomato Pizza

This is the pizza recipe that my friend shared with me. It is from Everyday magazine by Rachel Ray and it is probably one of the best pizza recipes that I have ever made! It is amazing!

Artichoke, Spinach and Tomato Pizza

5 TBSP olive oil
3 cloves garlic, finely chopped
3 TBSP parsley, chopped
Salt and Pepper to taste
Pizza Dough
2 cups Mozzarella cheese, shredded
5 TBSP grated Parmesan cheese
1 can artichoke hearts, diced
1/2 pint grape tomatoes, halved
2 cups spinach, chopped

Combine oil, garlic and parsley. Season with salt and pepper. Spread 3 TBSP on top of pizza dough leaving 1/2 inch border, then sprinkle with mozzarella cheese and 2 TBSP of the Parmesan cheese. Toss the artichokes, tomatoes and spinach in the remaining garlic mixture and arrange on top of the cheese. Sprinkle with remaining Parmesan. Bake at 500° for 15 minutes or until crust is crisp and golden.
