I knew this week was coming. The first week without an extra day off, or a holiday to mix things up. Oh well, might as well get it moving. At least I have our meals planned for. That helps so much. Keeps this very busy mama somewhat sane! Here is what we will be eating round these here parts!
Last weeks highlight was hands down the Tastes Like Lasagna Soup. It was lick your bowl clean kind of good. We are totally having this again- it really warmed us up. A good thing because it was so cold! How long to summer again?
This will be linked to Org Junkie - a wonderful place where hundreds- literally hundreds of people post what they will be eating each and every week. I have received so much inspiration from all the other posters out there who faithful put up their menu each week. Go check out orgjunkie for hundreds of menu ideas.
Monday: Chile Rellenos Casserole ( will post the recipe Tuesday)
Tuesday: A creation of my oldest boy that he LOVES- Chicken Rice-a-roni in the crock pot. Cook diced chicken breasts in a little olive oil on top of the stove. Meanwhile, mix up two boxes of chicken flavored rice-a -roni. Scoop the rice and the chicken into a crock pot and set to low for 3-4 hours. Perfect dish for a night full of basketball practices and random eating times.
Wednesday: Around Thanksgiving we were gifted with an extra turkey, so we will be roasting the turkey and serving it with mashed potatoes and stuffing. Looking forward to the leftovers!
Thursday: Turkey Leftovers
Friday: Homemade pizza- each family member gets to top their own little pie.
Saturday: Chinese Chicken Invention- another "invention" that the boys and I came up with one night to clean out the fridge- basically a stir fry with whatever is hanging out in your veggie drawer.
Sunday: Beef Tips and noodles
