BBQ Cajun Shrimp

This is a recipe that my brother and his wonderful wife shared with our family. It is so good, probably due to the large amount of butter that the recipe calls for.  Butter = good, am I right? Anyways, this is a recipe you will want to eat, so skip lunch and then you will be good- at least that is what I tell myself!

BBQ Cajun Shrimp
2 dozen large raw shrimp with tails still on (about 1 lb.)
Seasoning Mix:
1 tsp. ground cayenne pepper
1 tsp. black pepper
1/2 tsp. salt
1/2 tsp. crushed red pepper flakes
1/2 tsp. dried thyme
1/2 tsp. dried rosemary
1/2 tsp. dried oregano

1/4 lb. (1 stick) plus 5 Tbsp. unsalted butter
1 1/2 tsp minced garlic
1 tsp. Worcestershire sauce
1/2 cup clam juice
1/4 cup room temperature beer

In a small bowl, combine seasoning mix. Combine 1 stick of butter, garlic, Worcestershire sauce and seasoning mix in a large skillet over med-high heat. When butter is melted, add shrimp. Cook for 2 minutes shaking pan in a back and froth motion. Add remaining butter and clam juice, continue to cook and shake for 2 more minutes. Add beer and cook and shake for 1 minutes longer. Remove from heat and serve immediately with chucks of french bread.

Honey Ginger Salmon

We were going to grill this weekend, but the weather didn't cooperate. It rained cats and dogs! So my new recipe that we were going to try on the grill, I instead threw into the oven. It came out really tasty! I am not a huge salmon fan, because it is very "fishy" tasting to me, but this was not fishy tasting at all. It had a really nice oriental flavor. We will most definitely keep this one in mind when we want fish- on the grill or from the oven!

Honey Ginger Salmon
1 tsp ground ginger
1 tsp minced garlic
1/3 cup soy sauce
1/3 cup orange juice
1/4 cup honey
1-2 green onions, chopped
1 1/2 - 2 lbs. salmon fillets

Combine in a large zip lock bag the first 6 ingredients, mix well. Place salmon in bag and toss to coat. Refrigerate for at least 30 minutes. Remove from marinade. If baking in the oven: just  pour the salmon and the marinade in a well sprayed 13x9 inch baking dish.  Bake in a 425° oven for 25 minute or until fish flakes easily. If grilling: drain and reserve marinade. Lightly oil grill rack and preheat grill to medium. Grill the salmon for 12-15 minutes, brushing with the marinade every 5 minutes until the fish flakes easily.

Lemon Pepper Shrimp

My third son LOVES shrimp. For his birthday dinner this week, he requested this simple easy dinner that he could eat every night. As a side note- I "created" this recipe so all measurements are to your taste.
Lemon Pepper Shrimp
1 pkg cooked shrimp- we use the small size, not the cocktail size, but the next size up.
1/2 stick of butter, divided
Olive oil
2 Lemons- zested and juiced
Lemon pepper to taste
Kosher Salt
1-2 cloves garlic minced
Angel Hair pasta, cooked and drained
In a large skillet heat the Olive oil- I usually dump in 2 TBSP or so. Throw in butter and melt. Toss in shrimp, garlic, lemon juice and zest, salt and lemon pepper. Since the shrimp is already cooked, all you are doing is heating the sauce and the shrimp up. When it is bubbly and looks hot, toss with pasta and serve.

Lemon Pepper Tilapia- Tempt My Tummy Tuesday 7-7-09

Back in the day- my family would have a wonderful fish fry of sorts. Sometimes we would have fresh fish and my mom would whip up a batter and fry them right up. It was heavenly. I can still see her in my minds eye standing over the stove. And the smells, my mouth is watering- sigh! Unfortunately, that was one recipe that my siblings and I never asked her for. So I have resorted to making fish a different way whenever the mood strikes and this recipe is one that I threw together after scouring the web for tips and ideas. I hope that you will try it and enjoy it. My whole mob loved it, which surprised me, I thought there would be one who would turn his nose up.
Lemon Pepper Tilapia in foil packets
1 lemon- cut into slices
Tilapia fillets
Kosher Salt- to taste
Pepper- to taste
Lemon Pepper- to taste
Butter
Get your foil ready, it needs to be large enough that you can create a little envelope. Click here for a great step by step guide. Place two lemon slices on the foil, then top with a fish fillet. Season with salt, pepper and lemon pepper. Dot with butter. Fold up and bake at 400° for 20-25 minutes. If I had any fresh herbs that day I would have thrown them on top as well.
